Italian Asparagus and Mushroom Risotto with Collagen Garden Peas


A silky-smooth risotto bursting with the earthy flavours of mushrooms, sweet green peas, and fresh asparagus—made even more nourishing with a hidden scoop of Kitchen Ready Collagen Powder. It’s comforting, plant-based, and packed with benefits for skin, joints, and gut health.

 

Ingredients:

  • 1 tbsp olive oil

  • 1 small brown onion, finely diced

  • 2 garlic cloves, minced

  • 1 cup arborio rice

  • ½ cup dry white wine (optional)

  • 4 cups vegetable stock, warm

  • 1 scoop Kitchen Ready Collagen Powder

  • 1 cup mushrooms, sliced (Swiss brown or button)

  • 1 cup asparagus, chopped into 3–4cm pieces

  • ½ cup frozen or fresh green peas

  • Zest of ½ lemon

  • 1 tbsp nutritional yeast (or parmesan if not strictly vegetarian)

  • Sea salt and cracked black pepper to taste

  • Fresh parsley or thyme, to serve

Instructions:

  1. Heat olive oil in a wide pan over medium heat. Add the onion and garlic, cooking until soft and translucent (about 3 mins).

  2. Stir in the arborio rice and toast for 1–2 mins until slightly golden.

  3. Pour in the wine (if using) and stir until it evaporates.

  4. Gradually add warm vegetable stock, one ladle at a time, stirring continuously and allowing each ladle to absorb before adding the next.

  5. After about 10 mins, add the mushrooms and asparagus. Continue cooking, adding stock and stirring gently.

  6. Once the rice is nearly tender (around 18–20 mins in), add the peas and cook for another 2–3 mins.

  7. Turn off the heat. Stir through Kitchen Ready Collagen Powder, lemon zest, and nutritional yeast or parmesan. Season to taste.

  8. Cover and let sit for 2 mins, then serve hot with fresh herbs and a crack of black pepper.
