Ingredients:

1 tbsp olive oil

1 small brown onion, finely diced

2 garlic cloves, minced

1 cup arborio rice

½ cup dry white wine (optional)

4 cups vegetable stock, warm

Instructions:

Heat olive oil in a wide pan over medium heat. Add the onion and garlic, cooking until soft and translucent (about 3 mins).

Stir in the arborio rice and toast for 1–2 mins until slightly golden.

Pour in the wine (if using) and stir until it evaporates.

Gradually add warm vegetable stock, one ladle at a time, stirring continuously and allowing each ladle to absorb before adding the next.

After about 10 mins, add the mushrooms and asparagus. Continue cooking, adding stock and stirring gently.

Once the rice is nearly tender (around 18–20 mins in), add the peas and cook for another 2–3 mins.
