Collagen Chocolate Mousse Cake (No-Bake)

 Ingredients

For the base:

  • 1 cup almonds or walnuts

  • 1 cup pitted Medjool dates

  • 2 tbsp cacao powder

  • Pinch of sea salt

For the mousse filling:

  • 1 can (400ml) coconut cream, chilled overnight

  • 200g dark chocolate (70%+)

  • 3 tbsp maple syrup or honey

  • 2 scoops Kitchen Ready Collagen Powder

  • 1 tsp vanilla extract

For the topping (optional):

  • Crushed peanuts or almonds

  • Shaved dark chocolate

Instructions

  1. Prepare the base:

    • Blend nuts, dates, cacao, and salt until sticky. Press into the base of a lined springform cake tin. Refrigerate while you prepare the filling.

  2. Make the mousse:

    • Melt chocolate gently over a double boiler.

    • In a large bowl, scoop the thick coconut cream (discard water). Whip with maple syrup, vanilla, and collagen powder until fluffy.

    • Slowly fold in the melted chocolate until smooth and silky.

  3. Assemble the cake:

    • Pour mousse filling over the nut base. Smooth the top.

    • Refrigerate for at least 4–6 hours (overnight is best).

  4. Finish & serve:

    • Top with crushed nuts and chocolate shavings. Slice and enjoy chilled.
