Ingredients
For the base:

1 cup almonds or walnuts

1 cup pitted Medjool dates

2 tbsp cacao powder

Pinch of sea salt
For the mousse filling:

1 can (400ml) coconut cream, chilled overnight

200g dark chocolate (70%+)

3 tbsp maple syrup or honey

2 scoops Kitchen Ready Collagen Powder

1 tsp vanilla extract
For the topping (optional):

Crushed peanuts or almonds

Shaved dark chocolate
Instructions

Prepare the base:

Blend nuts, dates, cacao, and salt until sticky. Press into the base of a lined springform cake tin. Refrigerate while you prepare the filling.

Make the mousse:

Melt chocolate gently over a double boiler.

In a large bowl, scoop the thick coconut cream (discard water). Whip with maple syrup, vanilla, and collagen powder until fluffy.

Slowly fold in the melted chocolate until smooth and silky.

Assemble the cake:

Pour mousse filling over the nut base. Smooth the top.

Refrigerate for at least 4–6 hours (overnight is best).
