500g chicken breast or thigh, diced

1 tbsp coconut oil

1 onion, finely chopped

2 garlic cloves, minced

1 tbsp fresh grated ginger

1 can (400ml) coconut milk

2 tsp curry powder

½ tsp turmeric

1 tsp ground cumin

1–2 scoops Kitchen Ready Collagen Powder

Salt & pepper to taste

Juice of ½ lime

Fresh coriander for garnish
Optional Veggies:

1 cup chopped spinach or kale

1 cup chopped sweet potato (pre-cooked or par-boiled)
Instructions:

Sauté aromatics:
In a large pan, heat coconut oil. Add onion and cook until soft. Add garlic and ginger, sauté for 1–2 minutes. -
Spice it up:
Add curry powder, turmeric, and cumin. Stir for 30 seconds to release flavour. -
Add protein:
Add chicken and season with salt and pepper. Sear for 2–3 minutes. -
Simmer:
Pour in coconut milk. Add sweet potato (if using). Simmer on low heat for 12–15 minutes until chicken is cooked through. -
Finish with collagen:
Turn off heat. Stir in Kitchen Ready Collagen Powder and spinach/kale until wilted. Squeeze in lime juice. -
Serve hot with:
Brown rice, cauliflower rice, or warm roti. Garnish with fresh coriander.
