Creamy Collagen Mushroom & Thyme Soup

Ingredients (Serves 4)

  • 1 tbsp olive oil or butter

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 500g mixed mushrooms (e.g. button, Swiss brown, shiitake), sliced

  • 1 tsp fresh or dried thyme

  • ¼ tsp nutmeg

  • 1 tsp tamari or coconut aminos (optional, for umami depth)

  • 3 cups vegetable or chicken broth

  • ½ cup coconut cream or oat cream

  • Salt & pepper, to taste

  • 1–2 scoops Kitchen Ready Collagen Powder

  • Fresh parsley or thyme to garnish

Instructions:

  1. Heat oil in a pot over medium heat. Sauté onion until translucent.

  2. Add garlic and thyme, cook for 1 minute.

  3. Add mushrooms, tamari, nutmeg, salt and pepper. Cook for 8–10 minutes until mushrooms are soft and browned.

  4. Pour in broth. Simmer for 10 minutes.

  5. Blend soup (all or half, depending on your texture preference).

  6. Stir in coconut cream and Kitchen Ready Collagen Powder. Heat gently don’t boil.

  7. Serve warm, topped with herbs and optional drizzle of extra virgin olive oil.
