Ingredients (Makes 10–12 muffins)

1½ cups almond meal

½ cup desiccated coconut
-
2 scoops Kitchen Ready Collagen Powder

1 tsp baking powder
-
¼ tsp baking soda
-
Zest of 1 lemon
-
Pinch of sea salt
-
3 eggs
-
¼ cup maple syrup or honey
-
¼ cup coconut oil, melted
-
¼ cup lemon juice
-
1 tsp vanilla extract
Instructions:

Preheat oven to 175°C. Line or grease a muffin tin.

In a large bowl, mix almond meal, coconut, collagen, baking powder, soda, lemon zest, and salt.

In a separate bowl, whisk eggs, maple syrup, coconut oil, lemon juice, and vanilla.

Add wet ingredients to dry and stir until just combined.

Scoop mixture into muffin tin (¾ full).

Bake for 18–20 minutes or until a skewer comes out clean and tops are golden.

Cool in tin for 5 minutes, then transfer to rack. Enjoy warm or cool!
