Collagen Boosted Lemon Coconut Muffins

Ingredients (Makes 10–12 muffins)

  • 1½ cups almond meal

  • ½ cup desiccated coconut

  • 2 scoops Kitchen Ready Collagen Powder

  • 1 tsp baking powder

  • ¼ tsp baking soda

  • Zest of 1 lemon

  • Pinch of sea salt

  • 3 eggs

  • ¼ cup maple syrup or honey

  • ¼ cup coconut oil, melted

  • ¼ cup lemon juice

  • 1 tsp vanilla extract

 Instructions:

  1. Preheat oven to 175°C. Line or grease a muffin tin.

  2. In a large bowl, mix almond meal, coconut, collagen, baking powder, soda, lemon zest, and salt.

  3. In a separate bowl, whisk eggs, maple syrup, coconut oil, lemon juice, and vanilla.

  4. Add wet ingredients to dry and stir until just combined.

  5. Scoop mixture into muffin tin (¾ full).

  6. Bake for 18–20 minutes or until a skewer comes out clean and tops are golden.

  7. Cool in tin for 5 minutes, then transfer to rack. Enjoy warm or cool!
