- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander

Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes.
