This is a super tasty and simple pancake recipe without the bloat or guilt!
Eggs provide great protein content and bananas are packed with essential vitamins, fibre and energy to keep you moving. Cinnamon helps with blood sugar regulation and is totally delicious.
INGREDIENTS
• 1 banana
• 2 eggs
• Pinch of cinnamon
• 1 teaspoon honey or maple syrup
METHOD
Peel and mash banana, add 2 eggs and cinnamon and whisk well with fork.
Heat pan with a little olive oil or butter if you like, divide mixture into two pancakes and cook until golden, then flip until cooked through both sides.
Top your pancakes with a drizzle of honey or maple syrup, extra berries and a dollop of coconut yogurt if you like. A spoon of peanut butter also makes a delicious addition.
